Tuna Stuffed Tomato

Tuna Stuffed Tomato

4 small-medium sized tomatoes
2 cans of tuna (or fresh, cooked and cooled tuna)
2 tablespoons of freshly diced onion (Valencia was delicious!)
2 tablespoons of cucumber (with a splash of balsamic vinegar) or relish (I used homemade relish today)
2 tablespoons of red/green/yellow peppers (any one or a combo will work)
Lettuce or spinach

Place the tuna in a small mixing bowl (drain if you are using canned tuna) along with the diced onion and cucumber or relish. Slice the tops off of the tomatoes and set aside. Using a melon-baller, scoop out the insides of the tomato and add them to the tuna mix. Stir the ingredients together until they are well blended. (I took the edible part of the tomato tops, diced them, and added them to the tuna also.) Using a spoon or a fork, stuff the tomato with the tuna mixture until it is full and the tuna is slightly rounded on top. For decoration, you can take a few extra pieces of peppers and add them to the top. I used lettuce to decorate for the picture, but also ended up eating it as part of the meal. I had some of the tuna mix left over and rolled it up in the lettuce as a wrap…messy, but tasty.

Other ideas: I think that feta cheese would add a nice twist. Olives, mustard, mayonnaise (make your own), olive oil, basil, chopped spinach, or a combination could also be added.
