Trail Mix

One of my favorite healthy snacks is trail mix, but I like to make it myself to improve upon the quality of ingredients. My latest mix is:

Trail Mix

  • 1 c. raw pumpkin seed
  • 1 c. raw sunflower seeds (shelled)
  • 1/2 c. raw macadamia nuts
  • 1. c. roasted, unsalted peanuts (I’m not allergic but if it is an issue, you obviously shouldn’t include them…the same goes for all the other listed nuts.)
  • 1/4 c. raw pecan halves
  • 1/3 c. raisins
  • Real Salt to taste
  • dehydrated, flakes or shredded coconut to taste (usually around 1 tbsp)

I place all of the ingredients (btw, they are all organic) in a ziploc bag or large jar, seal the bag (or jar), shake to mix, and then dish some out to enjoy. I store all of the ingredients in the fridge to keep them optimally fresh because the oils in the seeds and nuts will go rancid if left in the warm too long.  I keep the part of the trail mix not currently being eaten in the fridge too.

Leaving out the macadamia, pecan, and peanuts would make this an allergy friendly recipe for most people but you should always check with your doctor if you are uncertain.
